The Pack Composition:

1. The Beginning: Ninfa Platinum Millésime 2012 (Tejo) A rare sparkling wine, crafted exclusively from Pinot Noir on clay-limestone soils in Rio Maior. With over a decade since the harvest, it presents the complexity that only time can bestow. The bubble is fine and the mousse creamy, revealing bakery notes and a vibrant freshness, preserved by the absence of sugar dosage (Brut Nature). Ideal to start the meal or accompany seafood starters.

2. The Fish Dish: Quinta da Costa do Pinhão White 2021 (Douro) This is not a conventional white. Coming from old vines (80-90 years old) in the Pinhão valley, it stands out for its texture and depth. The 20-day skin contact maceration and barrel aging give it structure, notes of stone fruit, and a minerality defined by schist. It is a winter white, full-bodied and serious, capable of standing up to cod dishes or baked fish.

3. The Meat Dish: João Tavares de Pina Terras de Tavares 2004 (Dão) An opportunity to taste the history of the Dão. At almost 20 years old, this red from Penalva do Castelo shows the nobility of the evolution of Jaen, Touriga Nacional, and Rufete grapes on granitic soil. The long aging in oak and bottle has polished the tannins, resulting in an earthy, elegant wine with firm acidity. The perfect choice to pair with roast meats or game.
